- 2 cups of flour
- 1 ½ cups of brown sugar
- 1 ½ tsp of baking soda
- ½ tsp salt
- 1 ½ cups of orange juice
- ½ cup of melted coconut oil
- 1 tbsp of apple vinegar
- 1 tsp vanilla extract
- The zest of 2 oranges
- ½ cup of dried cranberries
- 1 tsp powdered cloves
- Preheat the oven to 350F.
- Combine all dried ingredients except for the cranberries and mix well.
- Combine all wet ingredients and mix well.
- Add the wet mixture to the dry ingredients and mix slowly until well combined. Add the cranberries.
- Bake for 30 minutes to an hour or until a clean fork comes out of it. Depending on your oven.
- Remove from the oven and let it cool down for around 10 minutes before serving.
- Eat with your favorite warm drink on a cloudy/ snowy day.
- Add Ghee or Chocolate Ghee (yes it is a thing!) on top.
- Add a thin layer of Chyawanprash on top.
- Warm up the cake and add your favorite ice cream on the side (not something Ayurveda recommends but freaking delicious nonetheless).
